Did you go apple picking this weekend? My kids are always bugging me to make bacon. When we got home from apple picking, I had to come up with something quick for lunch. So, why not mix the bacon with the apples? To top it off- quick is of course, GRILLED CHEESE! I baked these in the oven, and the cheese was ooey-gooey and the apples were cooked perfectly!
2 pieces of bacon per sandwich, cooked
2 pieces cheddar cheese, per sandwich
1 apple, cored and sliced
2 slices of bread
Maple Mayo
1/2 cup mayo
2 tablespoons pure maple syrup
1-1/2 tablespoons brown sugar
Mix well.
Add mayo to one side of the bread and place it facing down. Next, add the Maple Mayo or some apple butter to the side facing up.
Place a piece of cheese (cheddar would be great. I had Colby Jack on hand), on top of the Maple Mayo.
Wash, Core, and slice a couple of pieces of apple. Place it on top of the cheese.
Add crispy bacon on top of the apples. I used this pepper bacon.
Add another layer of cheese on top of the bacon.
Add a layer of Maple Mayo and place the maple mayo side of the bread on top of the 2nd piece of cheese. Top the bread with mayo. Grill in a pan until both sides are nice and golden. I baked these sandwiches in the oven until golden brown because I had so many to prepare.
