Did you know that today is National Potato Day? My mom has been making potatoes au gratin for as long as I can remember. Their carby, cheesy goodness is an addiction that I can't {and don't want to} overcome.
Add bacon {because it makes everything better} and broccoli {to keep from feeling bad about the bacon} to the mix and there's no way I'm giving it up! This will be on the dinner menu for a while to come.
Here's all you need:
3 large potatoes
3/4-1 C freshly grated Parmesan cheese
1 C whole milk
1 C broccoli florets
1 lb. crumbled bacon, cooked just until crisp {about 1 1/4 Cups}
Here's all you do:
Pre-heat oven to 375*; spray a 1 1/2 qt casserole dish with non-stick cooking spray
Clean and slice potatoes about 1/8 inch thick
Layer the bottom of the dish with 1/3 the potatoes
Add 1/4 C cheese, drizzle with 1 tsp. bacon fat, 1/2 C bacon and sprinkle with pepper
Repeat.
Add milk, then top with remaining 1/4 C bacon, 1 C broccoli and remaining 1/4 C cheese
Bake for 50 min or until potatoes are tender. Sprinkle with another 1/ C cheese if desired
