Today is National Butterscotch Brownie Day! The perfect excuse to try these delicious Bacon Butterscotch Blondies..aka Breakfast Brownies - because they taste like pancakes with syrup and bacon all in one bite!!
Ingredients:
1 cup (2 sticks) unsalted butter, melted
2 cups light brown sugar
2 eggs
1 ½ teaspoons pure vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
1 lb slices of bacon, fried and crumbled
¼ cup butterscotch chips
¼ cup chocolate covered toffee bar (such as Heath Bar), chopped finely into bits
Directions:
Preheat oven to 350⁰F.
In a large bowl, whisk together sugar and melted butter until smooth. Add eggs and vanilla, whisking until incorporated.
In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Add dry ingredients to wet ingredients, stirring to combine. Fold in bacon, butterscotch chips, and toffee bar bits.
Pour batter into a 9 x 13 inch greased or parchment lined pan, spreading evenly. Bake for 30-35 minutes, or until done.
