This Bacon Wrapped Cherry Merlot Pork Tenderloin sure sounds a little fancy and it might even look like something you’d serve to guests, but in reality it’s one of the easiest meals. EVER. It also was enjoyed by each and every person around our dining room table. Our 2 year old? He had eaten his first piece before I had even taken my first bite. How’s that for a gold star review?
Pork tenderloin is seasoned with smoky mustard and salt and pepper before taking a twirl with numerous slices of Bacon. It’s then roasted before being slathered with – my secret ingredient! – Robert Rothchild Farm’s Hot Cherry Merlot Dip. Subtle merlot wine is blended with cherries with just a bit of underlying heat from habanero peppers. In short, it’s pretty amazing. And combining the sweet cherries with a bit of salt from the Bacon? Insanely delicious.
