Oh ya, and get this, with Jalapeno Cucumber Relish! On any given night in San Francisco’s Mission District—or Mexico City, for that matter—the aroma of Bacon and griddled onions wafts from the many vendors slinging this classic street food. It beckons like a siren: you know eating it is going to cause you to crash into the rocky shore of caloric regret, but you go for it anyway.
Don’t use fancy thick-cut Bacon for this one (unless you really want to...haha). Something like Original Oscar Meyer is best. We add chopped roasted poblano chiles to the mayo, which makes a nice addition should you have the time.
