Banana and bacon cookies have been about for a while, they even made a brief appearance in Breaking Bad, but for me it screamed to be a muffin. Think of the overwhelming joy of salted caramel sauce; the sweet caramel entwined with the punchy salt, well if you like that ladies and gentlemen I give you the banana and bacon muffin.
Banana and bacon mini muffins (makes 50 mini muffins)
Sliced Bacon
1/2 lb. unsalted butter
1 1/4 c golden caster sugar
1 tsp. vanilla paste (or 1 tablespoon maple syrup)
2 large eggs
2 bananas, roughly mashed
3 cups plain flour
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
3 tablespoons of soft light brown sugar to sprinkle over the tops.
Lay your sliced bacon on a baking tray and roast in a hot oven until crispy. Remove the fat (eat or discard) and chop the meat into very small pieces, about the size of your little finger nail, set aside on some kitchen towel.
Put the butter and sugar into a food mixer and cream until light and fluffy. Add the vanilla paste (or maple syrup) and whilst the mixer is still running add the eggs one at a time and beat for about 1 minute.
Add the bananas and beat really well until thoroughly mixed.
Sift in the flour, baking powder and bicarbonate of soda and fold in until completely incorporated then do the same with almost all of the bacon.
Spoon into petit four cases placed in a petit four baking tray, top with the remaining bacon pieces and sprinkle over the soft light brown sugar. Bake in an oven preheated to 400 F for 12- 15 minutes or until the tops are golden.
