Try this cheesy Baked Bacon Tortellini!!
Ingredients:
-12 slices bacon (recipe calls for 4 slices, but you know we need more!)
-1 small white onion, diced medium
-1 garlic clove, minced
-coarse salt and ground pepper
-1 tbsp flour
-2 cups whole milk (I used 1 cup half n half and 1 cup 1% milk)
-2 packages cheese tortellini (8.8 ounces each)
-1/2 cup grated Parmesan
-1/2 cup grated mozzarella (my own addition)
What to Do:
1. Heat broiler with rack in top position. In a medium saucepan, cook bacon until browned and crisp (about 10 minutes) transfer to a paper towel to drain. Add onion and garlic to the saucepan with bacon grease and season with salt and pepper. Cook, stirring occasionally until onion is soft, about 8 minutes. Add flour and cook, stirring, 30 seconds.
2. Slowly add milk, whisking constantly. Add tortellini and bring to a boil over medium-high, stirring occasionally. Reduce to a simmer; cook, stirring often, until liquid has thickened (about 4 minutes). Remove from heat; stir in 1/4 cup of Parmesan and transfer to a 2 quart broiler proof dish. Top with crumbled bacon, remaining Parm and mozzarella. Broil until top is golden brown, 3-5 minutes.
